These sugar-free fudgy brownies swap regular sugar for Jaca allulose, so you get deep, chocolatey, crackly-topped brownies with zero added sugar and about 95 calories each. They bake up dense and rich in one bowl — no melting chocolate, no mixer, no boxed mix.
This is a Jaca-adjusted, healthier version of the classic fudgy cocoa brownie: we replaced every bit of sugar with Jaca allulose at double the amount, so the texture stays soft and fudgy while the sugar drops to nothing. One quick note — allulose browns faster than sugar, so we bake a touch cooler and keep an eye on the top.
Ingredients:
- ½ cup (113 g) unsalted butter, melted
- 1 tablespoon neutral oil (avocado, light olive, or melted coconut oil)
- 2¼ cups Jaca allulose (replaces 1⅛ cups sugar — a 2x swap)
- 2 large eggs, at room temperature
- 2 teaspoons pure vanilla extract
- ½ cup (65 g) all-purpose flour
- ½ cup (45 g) unsweetened cocoa powder
- ¼ teaspoon salt
- ½ cup sugar-free chocolate chunks or chips (optional)
Instructions:
- Preheat the oven to 325°F (165°C). Line an 8-inch square pan with parchment paper and lightly grease. (Allulose browns faster than sugar, so we bake a little cooler than a standard brownie.)
- In a medium bowl, whisk the melted butter, oil, and Jaca allulose together for about a minute, until glossy.
- Add the eggs and vanilla and beat for another minute, until the batter lightens in color.
- Sift in the flour, cocoa powder, and salt. Gently fold until just combined — do not overmix, or the brownies turn cakey.
- Pour the batter into the prepared pan and smooth the top. Scatter over the optional chocolate chunks.
- Bake 18–22 minutes, until the center is just set and a toothpick comes out with a few moist crumbs. Check at 18 minutes; if the top is browning quickly, tent loosely with foil.
- Cool completely in the pan before slicing into 16 squares — they firm up and turn extra fudgy as they cool.
