Apple Fritters with Jaca

These sugar-free apple fritters swap traditional sugar for Jaca 100% pure allulose, giving you crispy, golden, cinnamon-glazed fritters packed with fresh apples and only about 4 grams of sugar in each one. They taste like the bakery-case classic, minus the sugar crash.

This is a Jaca-adjusted, healthier version of a classic apple fritter: every bit of conventional sugar is replaced with Jaca allulose at double the amount, so you keep the sweetness while cutting the added sugar to zero.

Ingredients:

For the fritters

  • 3 to 4 cups canola oil, for frying
  • 3 cups diced apples (Fuji, Honeycrisp, or Granny Smith), peeled and cored — about 3 large apples
  • 2 teaspoons fresh lemon juice
  • 1½ cups all-purpose flour
  • ⅔ cup Jaca allulose (replaces ⅓ cup conventional sugar, doubled)
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup whole milk
  • 1 large egg, lightly beaten
  • 3 tablespoons unsalted butter, melted and slightly cooled
  • 1 teaspoon pure vanilla extract

For the glaze

  • 4 cups Jaca allulose (replaces 2 cups confectioners' sugar, doubled), blended to a fine powder
  • 6 to 8 tablespoons whole milk, added gradually until pourable
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon ground cinnamon

Instructions:

  1. Heat the canola oil in a large, deep pot over medium-high heat until it reaches 375°F (190°C).
  2. In a large bowl, toss the diced apples with the lemon juice and set aside.
  3. In a separate large bowl, whisk together the flour, Jaca allulose, baking powder, salt, cinnamon, and nutmeg until well combined.
  4. Make a well in the center of the dry ingredients and pour in the milk, beaten egg, melted butter, and vanilla. Mix until just combined into a thick batter.
  5. Gently fold in the apples until they are mostly coated in batter — it will look like a lot of apples, and that's exactly right.
  6. Grease a ¼-cup measuring cup or large scoop, portion out the batter, and transfer each scoop onto a greased metal spatula, flattening into a disc.
  7. Carefully slide the batter off the spatula into the hot oil, frying only 3 to 4 fritters at a time. Cook 2 minutes per side, until deep golden brown.
  8. Transfer the fritters to a paper towel-lined plate and let cool slightly.
  9. Make the glaze: whisk the powdered Jaca allulose with the vanilla, cinnamon, and milk, adding the milk a little at a time until you have a thin, pourable glaze.
  10. Dip each fritter into the glaze (or spoon it over the top), letting the excess drip off. Serve warm.
