Sugar-Free Sour Cream Pound Cake with Jaca

This sugar-free sour cream pound cake swaps every bit of sugar for Jaca allulose, so you get a dense, buttery, moist slice with about 1 gram of sugar and roughly 175 calories — all the old-fashioned pound cake flavor, none of the sugar crash.

Ingredients:

  • 2 cups Jaca allulose (in place of 1 cup granulated sugar)
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3 large eggs
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sour cream

Instructions:

  1. Preheat your oven to 325°F. Grease and flour an 8x4-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a stand mixer, beat the butter and Jaca allulose on medium speed for about 10 minutes, until light and fluffy, scraping down the bowl as needed. Allulose creams a little differently than sugar, so give it the full 10 minutes.
  4. Add the eggs one at a time, then the vanilla, and beat for 2 minutes more.
  5. On low speed, alternate adding the flour mixture and the sour cream — beginning and ending with the flour — mixing just until combined.
  6. Pour the batter into the prepared pan and bake for 55–65 minutes, until a toothpick inserted in the center comes out clean. Because allulose browns faster than sugar, tent the top loosely with foil if it darkens before the center is set.
  7. Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely before slicing.
