French Silk Pie with Jaca

A velvety, mousse-like chocolate filling nestled in a flaky pastry crust and topped with billowy whipped cream and chocolate curls. This classic French Silk Pie uses Jaca (allulose) instead of sugar for all the decadence with none of the blood sugar spike. Perfect for Pi Day or any day you need a show-stopping dessert!

Ingredients:
- 1 sheet refrigerated pie crust
- 1⅓ cups Jaca sugar (replaces ⅔ cup sugar at 2x ratio)
- 2 large eggs
- 2 ounces unsweetened chocolate, melted
- 1 teaspoon vanilla extract
- ⅓ cup butter, softened
- ⅔ cup heavy whipping cream
- 4 teaspoons Jaca confectioners' style sweetener (replaces 2 tsp confectioners' sugar at 2x ratio)
- Whipped cream and chocolate curls (optional, for garnish)
Instructions:
- Cut the pie crust in half. Repackage and refrigerate one half for another use. On a lightly floured surface, roll out the remaining half into an 8-inch circle. Transfer to a 7-inch pie plate and flute the edges.
- Line the crust with a double thickness of heavy-duty foil. Bake at 450°F for 4 minutes. Remove the foil and bake until the crust is golden brown, about 2 minutes longer. Cool completely on a wire rack.
- In a small saucepan, whisk together the 1⅓ cups Jaca sugar and eggs until well blended. Cook over low heat, stirring constantly, until the mixture reaches 160°F and coats the back of a metal spoon. Remove from heat.
- Stir the melted unsweetened chocolate and vanilla extract into the egg mixture until smooth. Cool to lukewarm (about 90°F), stirring occasionally.
- In a medium bowl, cream the softened butter until light and fluffy, about 3–4 minutes. Add the cooled chocolate mixture and beat on high speed for about 5 minutes until light and airy.
- In a separate large bowl, beat the heavy whipping cream until it begins to thicken. Add the 4 teaspoons Jaca confectioners' style sweetener and continue beating until stiff peaks form.
- Using a flexible spatula, gently fold the whipped cream into the chocolate mixture until just combined. Be careful not to deflate the filling.
- Pour the filling into the cooled crust and smooth the top. Cover loosely with foil and refrigerate for at least 6 hours or overnight.
- Before serving, garnish with additional whipped cream and chocolate curls if desired. This is a Jaca-adjusted healthier version — all the silky, rich chocolate indulgence of the classic without the sugar crash. Refrigerate any leftovers.
