Sugar-Free Pumpkin Bread with Jaca

This sugar-free pumpkin bread swaps conventional sugar for Jaca allulose, giving you a moist, warmly spiced fall loaf with 0g added sugar and about 14g net carbs per slice. It bakes up tender and golden — exactly like the pumpkin bread you grew up with, minus the sugar we grew up with.

This is a Jaca-adjusted, healthier version of a classic pumpkin bread. We replaced 1½ cups of conventional sugar with 3 cups of 100% pure Jaca allulose (twice the amount), so every slice stays sweet and moist without the blood-sugar spike.

Prep time: 10 minutes · Cook time: 50 minutes · Total: 1 hour · Yield: 2 loaves (16 slices)

Ingredients:

  • 2 cups all-purpose flour
  • 3 cups Jaca allulose (replaces 1½ cups conventional sugar)
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ teaspoon fine sea salt
  • 3 large eggs, at room temperature
  • 1 cup extra-light olive oil (or vegetable oil)
  • 15 oz (1 can) pumpkin puree
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F. Butter and lightly flour two 8½ x 4½-inch loaf pans.
  2. In a large bowl, whisk together the flour, Jaca allulose, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, whisk the eggs, oil, pumpkin puree, and vanilla until smooth.
  4. Pour the wet mixture into the dry ingredients and whisk just until combined — don’t overmix, or the loaf can turn dense.
  5. Divide the batter evenly between the two pans. Bake 45–55 minutes, until a toothpick inserted in the center comes out clean.
  6. Jaca allulose browns faster than conventional sugar, so if the tops darken before the centers set, tent the loaves loosely with foil for the last 10–15 minutes.
  7. Cool in the pans for 10–15 minutes, then turn out onto a wire rack to cool completely before slicing.

Why Jaca allulose? Allulose is a rare sugar that tastes and bakes like the sugar we grew up with, but your body doesn’t metabolize it as sugar — so it adds essentially no calories and no net carbs. Using 100% pure Jaca allulose at twice the amount keeps this pumpkin bread just as sweet and moist, with 0g added sugar per slice.
