Pumpkin BBQ Sauce Pulled Pork

Ingredients (Serves 6-8):
- 3 lbs pork shoulder, trimmed
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1 cup pumpkin puree
- 1/2 cup tomato paste
- 1/4 cup apple cider vinegar
- 1/3 cup Jaca
- 2 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp chili powder
- 1/4 tsp ground cloves
Instructions:
- Season pork with salt, pepper, and smoked paprika. Place in a slow cooker.
- In a bowl, whisk together pumpkin puree, tomato paste, apple cider vinegar, Jaca, Worcestershire sauce, garlic powder, onion powder, chili powder, and cloves.
- Pour sauce over pork. Cook on low for 8 hours or high for 4 hours until tender.
- Shred pork with two forks, mix with sauce, and serve on buns or with mashed potatoes.
