Pumpkin BBQ Sauce Pulled Pork

Ingredients (Serves 6-8):

  • 3 lbs pork shoulder, trimmed
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1 cup pumpkin puree
  • 1/2 cup tomato paste
  • 1/4 cup apple cider vinegar
  • 1/3 cup Jaca  
  • 2 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp chili powder
  • 1/4 tsp ground cloves

Instructions:

  1. Season pork with salt, pepper, and smoked paprika. Place in a slow cooker.
  2. In a bowl, whisk together pumpkin puree, tomato paste, apple cider vinegar, Jaca, Worcestershire sauce, garlic powder, onion powder, chili powder, and cloves.
  3. Pour sauce over pork. Cook on low for 8 hours or high for 4 hours until tender.
  4. Shred pork with two forks, mix with sauce, and serve on buns or with mashed potatoes.
