This sugar-free maple-glazed salmon swaps maple syrup for Jaca allulose, giving you the same glossy, sweet-and-savory glaze with virtually none of the sugar. The salmon bakes up buttery and flaky while the Jaca glaze caramelizes into a sticky, restaurant-worthy finish — and it’s on the table in about 25 minutes.
This is a Jaca-adjusted, healthier version of the classic. We replaced ¼ cup maple syrup with ½ cup Jaca allulose (2x the amount) plus a splash of maple extract, so the maple character stays put while the sugar drops to about 1 gram per serving.
Ingredients:
- 4 salmon fillets (4–6 oz each), skin-on
- Salt and pepper, to taste
- ½ cup Jaca allulose (replaces ¼ cup maple syrup — 2x the amount)
- 2 tablespoons water
- ½ teaspoon maple extract
- 2 tablespoons soy sauce (or tamari)
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced (about 2 teaspoons)
- 1 teaspoon fresh grated ginger
- Optional: sesame seeds and sliced green onions, for garnish
Instructions:
- Preheat the oven to 400°F (205°C). Grease a small baking dish or line a sheet pan. Pat the salmon dry, place it skin-side down, and season with salt and pepper.
- In a small saucepan over medium heat, whisk the Jaca allulose with the water until dissolved and lightly syrupy, 2–3 minutes. Off the heat, stir in the maple extract, soy sauce, Dijon, garlic, and ginger.
- Spoon half the glaze over the salmon, reserving the rest. Bake for 10 minutes.
- Pour the remaining glaze over the fillets and bake 3–5 minutes more, until the salmon flakes easily and reaches 145°F in the center.
- For a caramelized top, broil 1–2 minutes. Garnish with sesame seeds and green onions, and serve.

Why Jaca? Allulose browns and caramelizes just like sugar, so you get that signature maple-glaze sheen — but with a fraction of the calories from sweetener and no blood-sugar spike. It’s the easy swap that makes a weeknight salmon dinner genuinely guilt-free.
