Traditional Kung Pao sauce leans on a few tablespoons of conventional sugar to balance the salty soy and sour vinegar. Here, Jaca allulose (100% pure allulose) does that job at 2× the amount, so the sauce still turns syrupy and craveable without the added sugar.
Ingredients:
Chicken & sauce
- 1 lb (500 g) boneless, skinless chicken thighs, cut into bite-size pieces
- 2 tsp cornstarch
- 1 tbsp light soy sauce
- 1½ tbsp dark soy sauce
- 2 tbsp Chinese black vinegar (or rice vinegar)
- 1 tbsp Shaoxing cooking wine (or dry sherry)
- 6 tbsp Jaca allulose (replaces 3 tbsp conventional sugar — 2×)
- ½ tsp sesame oil
- ⅓ cup water
Stir-fry
- 2 tbsp peanut oil, divided
- 2 garlic cloves, minced
- 1 tsp finely chopped fresh ginger
- 6–10 dried red chillies, cut into ¾-inch pieces, most seeds removed
- 3 green onions, cut into ¾-inch pieces (white and green parts separated)
- 1½ tsp ground Sichuan peppercorns
- ¾ cup roasted unsalted peanuts
Instructions:
- Make the marinade and sauce: In a bowl, whisk the cornstarch into the light and dark soy sauce until smooth. Spoon 2 teaspoons of this into a separate bowl, add the chicken, toss to coat, and let it sit 10 minutes. To the remaining soy mixture add the black vinegar, Shaoxing wine, Jaca allulose, sesame oil, and water. Stir until the Jaca dissolves — this is your Kung Pao sauce.
- Sear the chicken: Heat 1 tablespoon peanut oil in a wok or large skillet over high heat. Add the chicken in a single layer and cook about 3 minutes, until golden and cooked through. Transfer to a plate.
- Fry the aromatics: Add the remaining 1 tablespoon oil to the wok. Add the garlic, ginger, dried chillies, the white parts of the green onions, and the ground Sichuan pepper. Stir-fry 30 seconds, until fragrant — don't let the garlic burn.
- Reduce the sauce: Pour in the Kung Pao sauce and let it bubble 1–2 minutes, stirring, until it reduces to a glossy, syrupy consistency.
- Toss and finish: Return the chicken to the wok with the peanuts and the green onion tops. Toss 1 minute so everything is coated in that syrupy sauce.
- Serve immediately over steamed rice.
