Jaca Jam

Ingredients:

  • 2 pounds of fresh, ripe strawberries
  • 5 ½  cups of Jaca sugar
  • ¼ cup of lemon juice

- Hull (remove stems and leaves) and chop or mash the strawberries
- Cook strawberries with the Jaca sugar and the lemon juice on low heat until the Jaca sugar is dissolved
- Set heat to high and bring to a full boil
- Continue boiling at medium heat for about 30 min. until the mixture reaches 220 degrees F, stirring often (use candy thermometer)
- Let it rest for 15 min., place a spoonful of jam on a cool plate, and check its consistency after 2 min.
- Possibly extend cooking time to achieve a thicker texture
- Pour into hot, sterile jars, seal, and boil jars in hot water following manufacturer’s instructions
