Honey Garlic Shrimp with Jaca

Juicy, golden-seared shrimp tossed in a sticky honey-garlic glaze made with Jaca rare sugar instead of honey. Ready in 20 minutes — serve over rice with fresh scallions and a squeeze of lime. This is a Jaca-adjusted healthier version with zero sugar spike.

Ingredients:

  • 1½ pounds large shrimp, peeled and deveined
  • ⅔ cup Jaca rare sugar (replaces ⅓ cup honey at 2x)
  • ¼ cup soy sauce
  • 3 garlic cloves, minced
  • Juice of 1 lime
  • 1 tablespoon olive oil
  • ¼ cup sliced scallions
  • 2 cups cooked white rice, for serving
  • 4 large leafy lettuce leaves, for serving (optional)

Instructions:

- Whisk together Jaca rare sugar, soy sauce, minced garlic, and lime juice until smooth.

- Place shrimp in a zip-top bag, pour half the marinade over, toss, and refrigerate 15-30 minutes. Reserve the rest.

- Heat olive oil in a large skillet over medium-high heat.

- Add shrimp in a single layer and sear 1 minute until golden on the bottom.

- Flip shrimp, pour in reserved marinade, and toss for 1-2 minutes until opaque and glaze is sticky.

- Serve over rice and lettuce. Garnish with scallions and extra pan sauce.
