Glazed Jaca Carrot Medallions

Ingredients:
● 3 medium carrots, peeled and sliced into ½‑inch rounds
● 1 tablespoon olive oil
● 3 ½ tablespoons Jaca sugar
● ½ teaspoon ground cinnamon
Instructions:
- Preheat the oven to 400 °F (200 °C). Line a baking sheet with parchment paper.
- Toss the carrot slices with olive oil, Jaca sugar and cinnamon until evenly coated.
- Arrange the slices in a single layer on the prepared baking sheet.
- Roast for 20–25 minutes, flipping once, until the carrots are tender and caramelized.
- Serve warm as a side dish.
