Glazed Jaca Carrot Medallions

Ingredients:

      3 medium carrots, peeled and sliced into ½‑inch rounds

      1 tablespoon olive oil

      3 ½ tablespoons Jaca sugar

      ½ teaspoon ground cinnamon

Instructions:

  1. Preheat the oven to 400 °F (200 °C). Line a baking sheet with parchment paper.

  2. Toss the carrot slices with olive oil, Jaca sugar and cinnamon until evenly coated.

  3. Arrange the slices in a single layer on the prepared baking sheet.

  4. Roast for 20–25 minutes, flipping once, until the carrots are tender and caramelized.

  5. Serve warm as a side dish.
