Fluffy Jaca pancakes

Ingredients:
- 2 cups all-purpose flour
- ½ cup of Jaca sugar
- 4 teaspoons baking powder
- ¼ teaspoon baking soda
- 1 ¾ cups of milk
- ½ teaspoon of salt and 4 tablespoons of unsalted butter OR 4 tablespoons of salted butter
- 1 large egg
- 2 tablespoons of vanilla extract
- Combine dry ingredients in a bowl and add milk, egg, butter, and vanilla while whisking to a smooth batter.
- Add more milk for a smoother consistency
- Melt a tablespoon of butter in a pan on medium-low heat and add ¼ cup of the batter for each pancake
- Flip when the underside turns lightly brown
- Serve with fresh blueberries or other fruit and sprinkle with Jaca sugar
